My brother and sister in law had plans to come over for dinner. This would have been no problem at all if it was any other time of the year. But it was Monday of finals week and I had an electronic portfolio to complete by wednesday of that week. Boy was I all over the place getting this dinner together. I looked for something that didn't require too much work and time. Then I realized my entire cook book consists of just that "The Best Simple Recipes!"I put together a chicken and pasta dish. It was pretty good. In it were pine nuts that I've never really eaten before. Very good. We accompanied the meal with a salad.
