Cookie Cake!

My best friend came up with this great idea. I'm sure someone has tried this once before because it's amazing!!
I made Carrot Cake Cookies today! 

Then I frosted them with cream cheese frosting creating an irresistible taste that just leaves you wanting more!



Of course I didn't make up the recipe. My dad gave it to me to make because it's his favorite type of cake. Good thing I didn't mess this one up like the cake I tried to make on his birthday... that was a mess.
From the recipe that makes the cake I was able to make 1, 9 inch round cake and 36 cookies.
This frosting has lumps in it because the cream cheese I worked with wasn't defrosted all the way. It tasted the same.
I can't wait to try another type of cake cookie! I think I want to try to make cheese cake bites next... hmm...

Feed My Boredom!



Today was supposed to be my first day back to classes and stress after a long, drawn out, winter break. Turns out it was very icy. Although my classes were still in session, I couldn’t leave my driveway. Considering, when I went to turn my car on I almost fell and it could have been fatal! (bit of exaggeration there)
I thought the best way to pass time would be to bake cookies and try to make them the same size for the business I’m working on. Well this made me open up my cookbook and I ended up making dinner and dessert. 

Dinner was Pork Chops with Spicy Orange glaze


I think I didn’t leave this over the fire long enough because it was still a watery sauce instead of a glaze… I don’t know how to fix that. The pork chops were perfectly cooked and juicy. I add a side of baked macaroni and cheese. It was all delicious.
 Dessert was a chocolate macadamia nut white chip cookie! Never tried that combo before but thanks to my sister and her weird combination that was on my mind!

Cookie Conundrum

 
I’ve recently been searching for the perfect name for a small business I want to create from my home. Although name unknown, I want to bake cookies and sell them. I have most of it figured out I just need a name and to make labels. As you know I made a lot of cookies this past Christmas and this is what inspired me to make it a business of my own because, let’s face it, we all like cookies, they are a great gift and not all of us have the time to make them. That’s where I come in.

Turkey Mozzarella Sub!!

I've been in a "catching up with my shows" kind of mood and wanted something easy to make so i can eat and continue watching my shows. I uncovered my cookbook because it has been a while since I've cooked. I found this amazing sandwich!

Its so easy and tasty. I compare it to a panini you might get at Panara. What you do is sautee diced tomatoes in garlic and crushed red pepper then on a sub spread basil pesto, add turkey, the sauteed tomatoes and mozzarella cheese. Toast it in the oven and you are all set. :)

Mango Tacos

It was a burst of different flavors when you first bit into it!
 The mangos were cheaper than usual so I bought some knowing the cook book will have something containing mangos.  Inside there is ground pork and cheese. the sauce is chopped mango with red onion, lime, cilantro and jalapeno. It was really good, hard to wrap because of the chunks. I used wheat wraps instead of white just to make it a little healthier even though it wasn't bad health wise. We had these for dinner but it seemed more like a lunch you could have out by the pool, not dinner in the middle of a snow storm!
